James Gall, Larkspur’s Managing Director, has an intrinsic gift of perception. Whether helping to determine the best choice of wine, or graciously visiting at the end of the meal, James touches every guest with genuine hospitality.
He believes hospitality is in his roots; a perpetual student of psychology, James relates well to all individuals from his guests to his staff. He enjoys building teams and relies upon this skill to create a unified staff that effortlessly extends hospitality to others. “I focus on teaching life skills, not just Larkspur skills. Salesmanship and hospitality are traits they can take with them on life’s journey. It gives the service team a long range perspective,” he said.
James spent his youth traveling around the world as his father’s position with the U.S. government engaged the family in many countries and cultures. At age 15, James realized his love of restaurants and his growing appreciation of food and wine. He began working in restaurants as soon as he was old enough, and started experimenting in the kitchen at home. Cooking quickly became one of his favorite hobbies, one he continues to enjoy today.
James graduated from James Madison University in Virginia with a degree in Hospitality Tourism Management, with a concentration in Food & Beverage. Upon graduating, he worked at the acclaimed, historic Joshua Wilton House. The establishment sourced considerable ingredients from Pollyface Farms, the pioneers of sustainable farming. ‘Beyond Organic’ was more than a slogan as owner Joel Salatin’s passion drove a movement that has become a restaurant way of life today.
In a move to the Rocky Mountains, James arrived in Vail, CO, where he furthered his knowledge at fine restaurants before landing at Savory Group’s Restaurant Avondale. He proved to be a strong leader and very effective in wine sales and was promoted to Managing Director at Savory’s flagship Larkspur Restaurant.
Known for its warm ambiance and contemporary American cuisine, Larkspur has found strength at the helm with James. His goal for the future of the company is to exceed the expectations of every guest. Passion for his profession and concentrated knowledge of food, wine and service, James is a winning combination that promises guests memorable experiences at Larkspur.
