Executive Chef, Christian McCallion, brings Larkspur Events & Dining a wealth of experience from his involvement in the hospitality world for nearly a decade. He discovered his passion for cooking at his first restaurant job as a dishwasher. Watching the chefs inspired him to often offer his help as a line cook for meal preparations. He picked up skills quickly which eventually led him to take a full-time job at the Alpenglow Restaurant in Denali, Alaska as Chef de Partie.
Prior to joining Larkspur, Christian spent four years in their kitchen learning and refining his techniques, to then step in to an available Garde Manager position in 2013. After a successful run as the sous chef, he moved into his current role of Executive Chef.
Today, Christian mentors the kitchen staff offering guidance to his team while overseeing the day-to-day culinary program. His commitment to dining excellence translates to consistently memorable meals and experiences for every Larkspur diner. An intrepid traveler and lover of the outdoors, Christian integrates local, Colorado ingredients and fresh produce into delicious food, beautifully presented. When he’s not in the kitchen, the talented musician can be found playing drums or his bass guitar – if he’s not outside somewhere.
